Antique doors, windows and window frames would have been seasoned for many years, outside in the sun, to prevent cracking and warping. And nobody has the experience and skill of Dipstrip at restoration and preservation! More recent doors won't have been made from a few solid pieces but rather combined from flakes and fragments of wood, unlike older doors. Warped wood after a bad paint strip is usually very difficult to repair, so you're best off not taking any chances.
