Antique doors, windows and window frames would have been seasoned for many years, outside in the sun, to prevent cracking and warping. An advantage older fixtures have is that they don't get the modern kiln drying, which can shorten the lifespan of the wood considerably, so it's usually a good idea to make the effort to restore them properly. Warped wood after a bad paint strip is usually very difficult to repair, so you're best off not taking any chances.
